At Shindigs Bar & Grill, we believe in great food, strong community ties, and the kind of hospitality that turns guests into family. Our story is deeply rooted in entrepreneurship, perseverance, and a passion for creating experiences that bring people together.

Our journey began over 30 years ago in Arkansas City, KS, when Rob & Janet Carroll took a leap of faith and founded Rob Carroll’s Sandblasting & Painting, Inc. (RCSP)—a business that has since become an industry leader in corrosion protection and coatings. Their drive to innovate and explore new ventures led them to launch Salvy Sousa in 2011, a nationally recognized gourmet sauce line that has earned over 35 national and international awards.

In 2014, the Carroll family began a new chapter with the vision of opening Shindigs Bar & Grill. This exciting project kicked off the family's first joint venture. The owner group includes daughters, Mallory Avery and Molly Walker with parents, Rob and Janet Carroll. The family launched the project with a massive construction and remodel effort, utilizing 95% local craftsmen and contractors, each of whom contributed their expertise and passion to the transformation. After years of hard work, Shindigs officially opened its doors in April 2017, bringing a unique dining experience to the Cowley community.
